Sunday Runday and Food Prep

Yesterday was such a beautiful day here in middle Georgia! Upper 60’s and clear… perfect day for going for a run in my Skirt Sports Gym Girl Ultra skirt and a t-shirt. My nephew came over as soon as I was about to go out the door, so he joined me for a nice 1 mile run and 1/2 mile walk uphill back home. Ayden is 6 years old and was sooooo excited and proud that he ran a mile. He has decided that he wants to run some races this season. So we made a deal to do the one mile run at the Macon Mud Run together. It made my heart happy to hear how much he loved running with me.

Although he did mention that he needed faster shoes with jet packs built in.

Me too, Ayden, me too.

Sunday is also my food prep day. I like to prepare all of my breakfast, lunch, and snacks for the week. I have found that if I do not prepare and plan good food for the week, then I tend to choose items that are not as healthy. (You know like the house special at the Mexican restaurant….). This week I am having the following:
Oatmeal with egg whites & blueberries (M/W/F after heavy lifting)
Scrambled eggs with spinach (T/Th)
Chipotle burgers (made with  97% lean beef and chipotle sauce)
Mustard glazed baked chicken
Steamed broccoli/cauliflower
Citrus Spiced Amaranth
chopped veggies w/ hummus

Prep time took about 2 hours. Not bad to have meals prepared and portioned out for the week! Do y’all food prep?

I also decided to try something new. I bought some tempeh and decided to stir fry it with edamame and broccoli. Tempeh is fermented soybeans in a cake form. Truth be told it doesn’t look appetizing, but it is actually pretty good.

Here is how I prepared it:
1 package tempeh/sliced
1 tbs coconut oil
3 tbs soy sauce
1 tbs minced garlic
1 tbs Siracha
1 cup edamame
1 package frozen broccoli
 Preheat skillet with coconut oil. Add the frozen veggies to stir fry with 1 tbs of the soy sauce. Stir in the garlic. 
Once the veggies are cooked, add the tempeh with the rest of the soy sauce and Siracha. 
Stir until the tempeh is coated and heated through.
Serve and enjoy. 

 I will definitely have this again! As a matter of fact, I am eating lunch while typing this blog post. I know, I know…I’m not supposed to multi-task while I eat. But geez…you know how it is. Lunch break probs. 
I plan on doing more recipes in future blog posts. I just need to learn how to take the fancy food pictures. Oooh…and fancy plates!!
